Ami, This Post Is For You!

As I mentioned in my last post, I've been so sad about the fact that I haven't written much lately. Guess what? I'm still sad about that. Even Ami reprimanded me about not writing so I officially know that it's unacceptable. That's why I dedicate this post - my attempt at getting back to the blogging grind - to Ami. It's fitting too because it's about cake and we all know what an amazing baker that girl is!

Lemme get right to the point. I love grapefruit. Everything about it. I love to eat it, smell it, wear it (mmm, Jo Malone!)... I just love the vibrant, lively, bold characteristics of it. Since I'm a pretty big citrus person all around and I adore citrus dishes in the summer, I get so excited that things like grapefruit and clementine are in season in the winter. I know I'm way late to the game on this one, but I recently came across the amazing Smitten Kitchen blog and boy, am I head over heels. The way Deb writes is so genuine and approachable. I feel as though I've known her for years and, to be honest, I should after the amount of hours of my life she's taken up with her photos, recipes and writing! I was looking through her winter recipes last week and one jumped out practically screaming my name: grapefruit-yogurt cake. Since I am by no means a baker, I read through the recipe and it seemed like something even I could do. Well, minus the panic that set in when it calls for you to 'grease and flour the pan'. People, if baking recipes aren't 'mix together and dump in a pan', I usually avoid them at all costs. However, one of my fun resolutions for 2012 is really to get more serious in the kitchen when it comes to baking. Mainly, I just don't want to be afraid to try my hand at things like pie dough just because I have to roll it out. It really is funny how I can be so good at and confident about cooking yet have no desire to bake... Getting off topic, sorry!

After I zested the grapefruit, I cut into it to juice it and I about died. I haven't seen a grapefruit this perfect in ages:
I squeezed myself a cup of juice and it was heavenly. Perfectly tangy but sweet. I literally texted the photo to six friends and my sweet boyfriend (who is ever so patient and encouraging when it comes to sharing in my food obsessions), because I was that excited about how lovely it was.

The cake overall couldn't have been easier! Since I'm a horrible photographer and do not write this blog for sole food/food photo purposes, I only took shots of the finished product (minus the glaze which I added this morning):

It really is delicious. Spongy, moist, tart and sweet, all complete with that lovely outer crust that provides just the perfect texture contrast. If this sounds good to you, check out the recipe (and entire blog!) here.

An Awesome New Years Eve Celebration

Welcome to 2011, friends!

What a glorious start to the new year it was with ringing it in at Dave's amongst some of the people most dear to me. Before I came home for Christmas, I'd sort of elected he and Tally to host a party since their house is lovely and it's most conveniently located for everyone. Thankfully, they were both gracious enough to indulge my request. I think all of us sort of share the same "superstition", if you will, that how you bring in the new year is an illustration of how that year will go for you. It's safe to say that I do believe we're all in for an amazing 2011 if we're basing it solely on how awesome the party was.

I've talked numerous times about how blessed I am in terms of the friendships I have. I'm definitely a 'relationship' person in both a dating and friendship way. I find meaning in building something with someone and I am very much a lover of tradition. It means something to me to see the same faces year after year at celebrations or to simply walk through the ever-changing seasons of life with the same tried and true people by your side. There is something to be said for reflecting on years past and being able to see how you grow and change alongside your friends. It excites me to know that, no matter what paths we all go down in the coming years, we'll all still be right there with/for each other. How fun will it be to grow old and share the stories of life together? With all of that said, I got to celebrate the start of a new year with some of my oldest friends including Grace who I've known for almost 29 solid years. What a tremendous joy!

Since the start of last year was full of nothing but confusion and stress for me, this year couldn't be more opposite with how fun, relaxed, simple and happy it was. I already know in my heart that tremendous things are in store for 2011 but what a nice way to welcome in the new year. We really had a good time:

Why Does The Weekend Fly?

I'll never be able to understand how Monday comes around so fast. I'd gladly work a ten or even twelve hour day just to have three day weekends. Sigh. Anyway, I had a terrific weekend. My friend, Patrick, came through town with some buddies on Friday and I was so thrilled. It's been about five years since we've seen each other! He and his friends were heading up to Niagra and I was lucky enough to have him pass through the city to visit me. Allison joined us and we just spent the evening laughing, trading stories, making memories. It was a good night. :)

Saturday, I went for a run and had an awesome phone date with Brant after. He's one of my oldest friends and has seen me through some terrible times in life. So, it made me feel really great when he commented on seeing some changes in me and feeling as though I'm different. He said he can tell that there's a part of me that's "letting go" and it made me smile. Because I am. Though I already feel this way myself, it's so neat to hear the friends that know me best voice their opinion which kinda allows me to have that validation, in a sense. Right after I hung up with Brant, I got the best call from Ami, too. She was baking with her niece, nephew and step-daughter and they called me on speaker to tell me they missed me. I swear, there's nothing like those sweet little voices yelling WE MISS YOU, VALERIE! to brighten your day. :) Anyway, I met some friends for dinner and drinks that night and had such a great time.

Sunday, I met Kristine at Redeemer for church and it was yet another awesome sermon from Tim Keller. That man is just amazing. I really wish I didn't dislike the church so much as a whole because I'd become a member in a heartbeat. Afterward, we did football Sunday as usual at Citibar and then I invited Allison over for dinner. I cooked shepherd's pie (which I'd been craving for two weeks!) and we had a lovely evening in.

The weather was gorgeous here all weekend, too. It was warm in the sun and cool when the breeze blew. People were out and about sipping coffees, strolling along, sitting out on stoops. Everyone seemed to have one common goal of enjoying the beautiful sunshine and sharing laughter amongst friends. I love these days in NY where it feels like the whole city is on exactly the same page. It was just about a perfect Fall weekend! I really had a great time meeting some new people over the last couple of days and it reminds me of just how many things there are to experience out there. I can only hope that everyone was equally as fond of me. :)
